Healthy Recipe: Prawn and Vegetables Fried Rice

Simple yet tasty and easy prawn and vegetable fried rice.

Health TIP: In my fried rice I have used half rice and half quinoa because rice has lot more carb content as compared to quinoa plus it also gives nutty texture to fried rice!

Recipe is for 1 person, at least 2 serves.

Ingredients:

Vegetables like chopped broccoli, green beans, capsicum, peas – 2 cups
Long grain rice cooked and drained -1 cup
Quinoa cooked – 1 cup
Sesame oil -1 tablespoon
Peanut oil – 2 tablespoon
Dark soy sauce – 1 tablespoon
Chilli flakes as per taste
Salt – I didn’t put as soy sauce has salt, but if needed you can put it
Prawn – 1 cup
Eggs – 2

Recipe:

Put a pan on heat, add canola oil and cook the prawns and eggs separately, keep it aside.

Then in the same pan saute all the veggies. I like my veggies al dante so once they just loose their rawness, I put the rice and quinoa and mix it all together.

Then add soy sauce, chilli flakes and sesame oil and mix it all together. Lastly, add cooked prawns and eggs on the top and mix.

That’s it, the fried rice is all ready to eat!!
